Many of you know that white wines go well with cheese, but why not be adventurous and try other wine and cheese pairings too? After trying out these adventurous parings, and can’t finish these cheeses in one go? It is not a big deal!
Cheese x Wine 

1. Brie or Triple-cream Cheese x Champagne
The acidity and bubbles from the champagne can help cut the fat in the cheeses and accentuate the luxury creaminess.
2. Fresh Chèvre x Sauvignon Blanc from Loire Valley
This is a classic terroir pairing, as the cheese and wine match each other in acidity and intensity.
3. Blue Cheese x Ruby Port or Sauternes
The rich creaminess and salty sharpness of blue cheese melt with the sweet depth of the wine.
4. Aged Cheddar / Parmigiano-reggiano x Red Bordeaux / Chianti
The tanginess and crystalline crunch of aged cheddar combine magically with the cassis and tobacco notes of Merlot and Cabernet Sauvignon; aged Parmigiano-reggiano is a nutty hard cheese with a distinct crumble, and the fruitiness of Chianti perfectly balances the salty richness of the cheese.

Storing Cheese

The best thing to do is to wrap your cheese in special cheese paper, but if you don’t have any (as do most households), you can wrap the cheese in wax paper before putting it in a Ziploc bag, or even better, in a plastic container. Stick on a label with the name of the cheese and its expiry date. Then place it in the crisper drawer of your fridge. This way your cheese can breathe and stay fresh for longer. Just remember: never just wrap your cheese in cling wrap!
